Lamb Kofta Protein Platter
Main Ingredient: Lamb (randomly selected with a 16.6% chance)
Ingredients:
- 500g minced lamb
- 3 cloves of garlic, minced
- 1 onion, finely chopped
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh coriander, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- 200g Greek yogurt
- 1 cucumber
- 1 tbsp lemon juice
- 200g mixed lettuce leaves
- 4 medium tomatoes, chopped
Instructions:
- Place minced lamb, garlic, onion, parsley, ground cumin, salt and pepper in a large bowl. Mix until well combined.
- Shape lamb mixture into 8 equal-sized koftas. Place them on a tray, cover and refrigerate for 30 minutes.
- Meanwhile, make a protein-rich tzatziki sauce by combining Greek yogurt, grated cucumber – previously peeled and deseeded -, lemon juice, and salt in a separate bowl.
- After 30 minutes, heat a grill or barbecue. Cook the koftas for around 5-6 minutes on each side or until they’re cooked as you prefer.
- Assemble your protein platter. Place lettuce leaves on the base, arrange cooked koftas on top, and scatter chopped tomatoes around. Serve with the tzatziki sauce on the side.

In a wide, shallow serving dish, lay a bed of crisp mixed lettuce leaves. On this green foundation, carefully arrange the four grilled lamb koftas to form a quartet of succulent brown ovals. Scatter fresh, ripe, chopped tomatoes around these central stars of the show, their red hue providing a vibrant contrast against the greens and browns. On the side, place a small accompanying bowl of the creamy, white tzatziki sauce – its bright and cooling touch being an inviting contrast to the warm, spiced lamb. The final image should be an inviting carnival of colors, all in beautiful harmony, soliciting the eyes first, then the taste buds.
