Red Wine Marinated Turkey Medallions
Ingredients:
- 8 lean turkey medallions
- 250ml red wine
- 2 cloves garlic, minced
- 1 sprig of fresh rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cups of green beans
- 100g shaved almonds
Cooking Instructions:
- Combine the red wine, minced garlic, and rosemary in a bowl. Add the turkey medallions, ensuring they’re fully submerged. Allow them to marinate for around 3 hours in the fridge.
- Remove the turkey from the fridge 15 minutes before cooking to bring it to room temperature. Meanwhile, preheat a grill to medium heat.
- Drizzle the turkey with 1 tbsp olive oil, season with salt and pepper, and grill for 7-8 minutes on each side, or until cooked through.
- While the turkey is grilling, blanch the green beans in boiling water for 2-3 minutes, then drain and plunge into ice water to retain their vibrant color.
- In a pan, heat the remaining 1 tbsp olive oil over medium heat. Add the almonds and toast until they’re golden and aromatic. Add the green beans to the pan, toss them with the almonds, and warm them through.

Plating:
Arrange two turkey medallions off-center on a minimalistic white plate. Pile the green beans and almond slivers neatly beside the turkey, allowing some to subtly overlap onto the turkey for a sense of unity between the components. The rich crimson color of the marinated turkey should stand out beautifully against the bright green color of the beans and the golden hue of the almond slivers. Garnish with a sprig of rosemary on top of the turkey medallions to give the plate a pop of color and indicate the flavors used within the dish.
