Recipe Name: Spiced Lamb & Quinoa Stuffed Bell Peppers

Ingredients:
- 1 cup of quinoa (cooked)
- 1 pound of lean ground lamb
- 4 large bell peppers (any color)
- 1/2 cup of feta cheese (crumbled)
- 1 medium red onion (chopped)
- 2 cloves of garlic (minced)
- 1/2 cup of fresh parsley (finely chopped)
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Cooking instructions:
- Preheat your oven to 350°F (175°C).
- Slice off the tops of the bell peppers and remove the inner seeds. Set aside.
- In a pan, heat the olive oil over medium heat. Add the onions and cook until they’re translucent, around 5 minutes. Add the garlic and cook for another minute.
- Add in the ground lamb, breaking it up as it cooks. Once fully cooked, add in the spices, salt, and pepper.
- Remove from the heat and mix in the cooked quinoa, feta cheese, and parsley.
- Stuff the bell peppers with the lamb and quinoa mixture. Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes. After 30 minutes, remove the foil and bake for another 10-15 minutes, or until the peppers are soft.
- Let them cool for 5 minutes before serving.

Plating:
