Meal: Flaming Caribbean Chicken Skewers
Ingredients:
- 500g chicken breast, cut into chunks
- 2 bell peppers (any color), cut into chunks
- 1 red onion, cut into chunks
- 1 pineapple, cut into chunks
- For the marinade:
- 2 tbsp. olive oil
- 1 fresh mango, chopped
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1/4 cup reduced sodium soy sauce
- A pinch of ground turmeric
- Salt and black pepper to taste
Instructions:
- In a blender, add all the marinade ingredients and blend until smooth.
- Put the chicken chunks in a bowl and pour the marinade over, ensuring that all the pieces are well coated. Let it marinate in the refrigerator for at least 2 hours.
- After marinating, thread the chicken onto skewers along with the bell peppers, onion, and pineapple.
- Preheat your grill or stovetop griddle pan. Once it’s hot, place the skewers on and cook for about 15 minutes, flipping occasionally, until the chicken is well cooked and the vegetables are slightly charred.
- Allow to rest for a few minutes before serving.

Plating:
Place two skewers on a flat rectangular plate, in a slanted way so they crisscross at the top. Drizzle any remaining marinade as a sauce over the skewers. On the side, garnish with a small pile of fresh greens such as arugula. A couple of lime wedges and a sprinkling of finely chopped scallions completes the presentation. The bright colors of the chicken, peppers and pineapple should stand out against the plate, with the chicken showing off its char lines, and the peppers and pineapple adding vibrancy to the meal.
