Meal: High-Protein BBQ Lamb Kebabs
Ingredients:
- 800g lean lamb, cut into cubes
- 1 large red bell pepper, cut into chunks
- 1 large green bell pepper, cut into chunks
- 1 large yellow bell pepper, cut into chunks
- 200g cherry tomatoes
- 200g button mushrooms
- 1 large red onion, cut into chunks
- 2 tablespoons olive oil
- Salt and pepper to taste
For BBQ sauce:
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 1 tablespoon chipotle powder
- 4 cloves minced garlic
Instructions:
- Prepare the BBQ sauce by whisking together the soy sauce, honey, chipotle powder, and minced garlic. Set aside.
- In a large bowl, toss the lamb cubes with the olive oil, salt, and pepper until well coated.
- Thread a piece of lamb, a chunk of red bell pepper, a cherry tomato, a mushroom, and a chunk of onion onto a skewer. Repeat until the skewer is filled, then do the same with the rest of the skewers.
- Heat the BBQ to medium-high heat. Grill the lamb skewers for 3-4 minutes on each side, or until the lamb is cooked to desired doneness.
- Brush the BBQ sauce onto the lamb skewers during the last minute of grilling.
- Remove the skewers from the grill and let them rest for a few minutes before serving.

Plating:
Place two skewers diagonally across a rectangular, white platter. Drizzle any leftover BBQ sauce over the kebabs for added color and flavor. The colors of the bell peppers, tomatoes, and onions should be vibrant against the charred and juicy lamb, creating a visually appealing and delectable high-protein meal.
