Crispy Chicken Protein Explosion
Ingredients:
- 500 grams boneless chicken breast (about 2 pieces)
- 1 cup whole grain breadcrumbs
- 1 egg
- 1 cup almond flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 tablespoon olive oil
Instructions:
- Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.
- In a shallow dish, combine the almond flour, breadcrumbs, garlic powder, onion powder, salt and pepper. Mix until well combined.
- In a separate bowl, beat the egg.
- Dip each chicken breast into the egg, ensuring it’s fully coated, then dip into the breadcrumb mixture, pressing the mix into the chicken to fully cover it.
- Place the coated chicken onto your prepared baking sheet.
- Toss the broccoli in the olive oil and arrange around the chicken on the baking sheet. Sprinkle with a bit of salt and pepper.
- Bake for 25-30 minutes, or until the chicken is cooked through and the broccoli is tender.
- Let sit for a few minutes before serving.

Start with a clean, white, medium-sized plate. Position one crispy chicken breast slightly off-centre. Next to it, arrange the tender broccoli florets. Optional: drizzle a thin strand of balsamic reduction over the chicken for added colour and depth of flavour. Garnish with a sprig of fresh parsley for added color.
