Greek-inspired Stuffed Lamb & Quinoa Pockets

- 4 whole-wheat pita pockets (fiber: 20g, fat: 4g, protein: 28g, calories: 560)
- 3 tablespoons olive oil (fiber: 0g, fat: 36g, protein: 0g, calories: 360)

Instructions:
- Heat one tablespoon of olive oil in a large pan over medium heat. Add the onion and garlic and sauté until translucent.
- Add the ground lamb to the pan and season with salt, pepper, and dried oregano. Cook until the meat is browned.
- Add the diced bell pepper to the pan and cook for another 5 minutes until soft.
- Stir in the cooked quinoa and feta cheese. Mix well and remove from heat.
- Cut the top off each pita pocket and stuff with the lamb-quinoa mixture.
- Brush the outside of the pita pockets with the remaining olive oil.
- Place the stuffed pitas in a preheated 350°F (175°C) oven for about 10 minutes, or until crispy and heated through.
- Remove from the oven and allow to cool slightly before serving.
