Recipe Name: Smoky Lamb Quinoa Buddha Bowl
Ingredients:
- 200g of lean lamb chops
- 1 cup of cooked quinoa
- 1 ripe avocado, sliced
- 1 cup of cherry tomatoes
- 1 cup of cucumber, sliced
- 1 handful of mixed greens
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Smoky Spice Rub:
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chilli powder
Instructions:
- Combine all spice rub ingredients and rub generously onto lamb chops.
- Heat a tablespoon of olive oil in pan on medium heat, sear the lamb chops on each side for about 4-5 minutes until cooked to your liking.
- Set aside and let it rest for a few minutes before slicing into thin strips.
- In a large bowl, start with a base of cooked quinoa. Arrange sliced lamb, avocado, cherry tomatoes, cucumber and mixed greens on top.
- Season with some salt and pepper and drizzle some olive oil over the top before serving.
