Protein Powerhouse Beef Stir-fry
Ingredients:
- 500g lean beef strips
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 inch fresh ginger, minced
- 1 large red bell pepper, sliced
- 1 large green bell pepper, sliced
- 200g broccoli florets
- 100g sugar snap peas
- 50g cashew nuts
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large wok or frying pan over medium-high heat.
- Add the beef strips and stir-fry for about 3-4 minutes until browned. Remove from the pan and set aside.
- In the same pan, add the garlic and ginger and stir-fry for about 1 minute until fragrant.
- Add the red and green bell peppers, broccoli, and sugar snap peas. Stir-fry for about 5 minutes until the vegetables are tender-crisp.
- Return the beef to the pan and add the cashew nuts.
- In a small bowl, combine the soy sauce, oyster sauce, and cornstarch mixture. Pour this over the beef and vegetables and stir well to combine.
- Season with salt and pepper to taste and cook for another 2-3 minutes until the sauce has thickened.
- Serve hot.
