Moroccan Minted Lamb Skewers
Main Ingredient: Lamb
Ingredients:
- 600g lean lamb leg, cut into cubes
- 1 cup of plain Greek yogurt
- 2 tablespoons of fresh mint, finely chopped
- 1 tablespoon of lemon zest
- 2 tablespoons of lemon juice
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1/2 teaspoon of ground coriander
- Salt and black pepper to taste
- Metal or wooden skewers
Instructions:
- In a bowl, mix together Greek yogurt, mint, lemon zest, lemon juice, minced garlic, ground cumin, ground coriander, salt and black pepper.
- Add the diced lamb into the bowl and mix until all the pieces are well-coated. Marinate for at least two hours.
- Thread the lamb onto skewers. If you’re using wooden skewers, make sure to soak them in water for at least 30 minutes prior to prevent burning.
- Preheat your grill or broiler on medium-high heat. Cook the skewers for 3-4 minutes each side, or until they reach your desired level of doneness.
- Let the skewers rest for a few minutes before serving.

Plating:
Place two or three skewers diagonally across a warm plate. Drizzle any remaining sauce from the marinade or cooking process over the top.
