Spiced Lamb Roulade with Protein-Packed Quinoa

Spiced Lamb Roulade with Protein-Packed Quinoa

Ingredients:

  • 800g of lamb loin, cleaned and trimmed
  • 2 cups of cooked Quinoa
  • 2 cups of spinach, chopped
  • 1 cup of feta cheese, crumbled
  • 20g of fresh thyme
  • 20g of fresh oregano
  • Salt and Pepper to taste
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon of paprika

Instructions:

  1. Preheat your oven to 200C degrees.
  2. Lay the lamb loin flat and season with salt, pepper, minced garlic, and paprika.
  3. In a bowl, combine the cooked quinoa, chopped spinach, crumbled feta, lemon juice, olive oil, thyme, and oregano.
  4. Spread the quinoa mixture evenly over the lamb loin, then carefully roll it up and secure with kitchen twine.
  5. Place the rolled-up lamb in a roasting tin and drizzle with olive oil. Roast in the preheated oven for about 25-30 minutes, depending on how well-done you like your lamb.
  6. Once cooked, let it rest for 10 minutes before slicing.

Plating:

Cut the Spiced Lamb Roulade into 1-inch thick slices and fan them out on a sleek, white dinner plate, showing off the colorful quinoa filling. Sprinkle a little of the remaining cooked quinoa around the slices as a base. Garnish with a sprig of fresh thyme on top for an elegant, upscale presentation. This hearty, high-protein main course should generally take center stage on the plate. Its vibrant colors should contrast well with the plate’s color and look deliciously inviting.
