Ingredients:
- 800g of lamb loin, cleaned and trimmed
- 2 cups of cooked Quinoa
- 2 cups of spinach, chopped
- 1 cup of feta cheese, crumbled
- 20g of fresh thyme
- 20g of fresh oregano
- Salt and Pepper to taste
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 2 cloves garlic, minced
- 1 tablespoon of paprika

Instructions:
- Preheat your oven to 200C degrees.
- Lay the lamb loin flat and season with salt, pepper, minced garlic, and paprika.
- In a bowl, combine the cooked quinoa, chopped spinach, crumbled feta, lemon juice, olive oil, thyme, and oregano.
- Spread the quinoa mixture evenly over the lamb loin, then carefully roll it up and secure with kitchen twine.
- Place the rolled-up lamb in a roasting tin and drizzle with olive oil. Roast in the preheated oven for about 25-30 minutes, depending on how well-done you like your lamb.
- Once cooked, let it rest for 10 minutes before slicing.
Plating:
Cut the Spiced Lamb Roulade into 1-inch thick slices and fan them out on a sleek, white dinner plate, showing off the colorful quinoa filling.
