Cowboy’s High-Protein Beef Stew
Ingredients:
- 800 grams of lean beef cut into cubes
- 2 tablespoons of olive oil
- 2 medium onions, chopped
- 4 cloves of garlic, minced
- 1 bunch of celery, chopped
- 500 grams of carrots, chopped
- 3 liters of low-sodium beef broth
- 2 tablespoons of Worcestershire sauce
- Freshly ground black pepper and sea salt to taste
- Fresh thyme and parsley for garnishing
Cooking Instructions:
- Heat olive oil in a large pot over medium heat. Add the beef cubes and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, sauté the onions until they turn translucent. Add the minced garlic and cook for another minute.
- Add the carrots and celery to the pot and stir well. Cook until they begin to soften.
- Return the beef to the pot and add the beef broth and Worcestershire sauce. Season with salt and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for about 2 hours, or until the beef is tender.
- Serve hot, garnished with fresh thyme and parsley.

Drizzle a bit of the savory broth over the top, allowing it to pool slightly at the bottom. It should be piping hot, with steam rising off the top for a visually appealing, and mouth-watering effect. Sprinkle freshly chopped parsley and thyme on top, adding a pop of bright green color and extra freshness right before serving. A couple of whole grain crackers on the side for fare are optional, keeping mindful of the carb count but also giving the opportunity to soak in the remaining broth.
