BBQ Lemongrass Chicken Protein Bowl
Ingredients (for one serving):
- 150 grams Chicken breast
- 1/2 cup Quinoa
- 1 cup Kale
- 2 tablespoons BBQ Sauce
- 1 stalk Lemongrass
- 1/2 cup shredded Carrots
- 1/4 Avocado
Cooking instructions:
- Preheat your grill or grill pan over medium-high heat.
- Marinade the chicken with BBQ sauce, finely chopped lemongrass, salt and pepper for about 10 minutes.
- Grill the chicken for 7 minutes on each side or until the internal temperature reaches 165°F.
- While the chicken is grilling, cook the quinoa according to package instructions.
- Steam the kale and carrots until they’re tender.
- Once everything is cooked, chop the chicken into bite-sized pieces.
