Ingredients:
- 500g lean ground beef
- 2 cloves garlic, minced
- 1 cup quinoa
- 1 red bell pepper, diced
- 1/2 cup corn kernels
- 1 can black beans, drained
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon cumin
- Salt and pepper to taste
- Chopped parsley for garnish
- Lemon juice from 1 lemon
Instructions:
- Cook quinoa according to package instructions.
- In a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant
- Add the ground beef to the pan, breaking it apart with a spatula. Cook for 5-7 minutes, until the beef is browned.
- Add chili powder, cumin, salt and pepper, and stir to season the beef.
- Add the bell pepper, corn, and black beans to the pan. Stir to combine
- Once the quinoa is cooked, add it to the pan and stir everything together. Drizzle the lemon juice over the meal and stir well.
- Remove from heat. Garnish with chopped parsley before serving.
