Caribbean Beef Steak Stir Fry

Ingredients:
- 400g of lean beef steak, thinly sliced
- 2 bell peppers, thinly sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons of coconut oil
- 2 tablespoons of jerk seasoning
- A handful of fresh coriander leaves
- A squeeze of lime juice
Cooking Instructions:
- Heat one tablespoon of coconut oil in a large frying pan over high heat.
- Add the beef steak strips to the pan and cook for 3-5 minutes until browned. Remove the steak from the pan and set aside.
- In the same pan, add another tablespoon of coconut oil and stir fry the peppers and onion for about 3 minutes or until they are softened. Add in the minced garlic and continue to stir fry for another 1 minute.
- Return the cooked steak to the pan, add the jerk seasoning and stir well to combine it with the other ingredients. Continue to cook for another 2 minutes.
- Remove from heat, stir in the fresh coriander leaves, and squeeze some lime juice over the stir fry.
