Crunchy Cashew Chicken

- 4 boneless, skinless chicken breasts
- 1/2 cup cashews, roasted
- 1/2 cup bread crumbs, whole grain
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup broccoli, steamed
- 1 cup bell peppers, sliced and grilled

Cooking Instructions:
- Preheat your oven to 375°F and lightly grease a baking tray.
- Blend the roasted cashews in a food processor until they are fine crumbs.
- Mix the cashew crumbs and bread crumbs together in a bowl and season to taste with salt and pepper.
- Heat the olive oil over medium high heat in a pan. Sear the chicken on both sides until golden brown, around 2-3 minutes each side.
- Dip each chicken breast into the cashew-bread crumb mixture, making sure all sides are coated.
- Place the coated chicken breasts onto the prepared baking tray and bake in the preheated oven for around 20-25 minutes or until the chicken is cooked through and no longer pink inside.
- While the chicken is baking, steam your broccoli and grill your bell peppers.
- Take the chicken out of the oven and let it rest for a few minutes before serving.
Plating:
Place a bed of steamed broccoli in the middle of the plate to start. Then, set one of the crunchy cashew chicken breasts atop the broccoli. Surround the chicken with a colorful assortment of grilled bell peppers. The plate should showcase vivid colors – green from the broccoli, red, green and yellow from the peppers, and golden brown from the cashew crusted chicken. The dish should be vibrant and appealing, with the cashew chicken serving as the star of the plate.
