Recipe: Curried Beef & Quinoa Stuffed Red Peppers
Main Ingredient: Beef (Minced)
Ingredients:
- 500 grams minced beef (lean)
- 1 cup cooked quinoa
- 4 large red bell peppers
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon mild curry powder
- 1 cup frozen peas
- 1 tablespoon minced fresh parsley
- Salt and pepper to taste
Cooking instructions:
- Preheat the oven to 200 degrees celsius.
- Heat the olive oil in a pan over medium heat and add onions, garlic and curry powder. Sauté until the onions are tender, about 5 mins.
- Add the minced beef, breaking it up with a spoon, until browned.
- Stir in the quinoa, peas, parsley, salt, and pepper.
- Cut the tops off the red peppers and remove the seeds. Fill each pepper with the beef and quinoa mixture.
- Place the stuffed peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender and the filling is hot.

“Plating:”
Place a stuffed red pepper in the middle of a white serving plate. Drizzle a little spoonful of remaining sauce around the base of the pepper. Garnish the dish with a sprinkling of parsley on top of the pepper for color contrast. There should be a visual burst of warm red from the pepper, with tantalizing glimpses of the hearty, golden-brown beef and quinoa mixture peeking from within.
