Ingredients:
- 450 grams lamb loin, cut into 1-inch pieces
- 1 cup cooked wild rice blend
- 1 can (15 oz) of black beans, drained and rinsed
- 1 bell pepper, diced
- 1 red onion, diced
- 2 cloves garlic, minced
- 3 tablespoons of olive oil
- Fresh coriander for garnish
- Salt and pepper to taste
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili flakes
- Juice of 1 lime
Cooking Instructions:
- Season the lamb with salt, pepper, cumin, smoked paprika, and chili flakes. Let it sit for 10 minutes to marinate.
- Heat 2 tablespoons of olive oil in a pan over medium-high heat. Add the lamb pieces and sauté until nicely browned. Set aside.
- In the same pan, add the remaining tablespoon of olive oil. Add the diced bell pepper and onion, sauté until softened.
- Add the minced garlic, stir until aromatic.
- Add the cooked wild rice blend and black beans to the pan, stir everything together.
- Return the lamb to the pan, stir well and drizzle with lime juice. Cook for another 2 minutes.
