Recipe: Fruity Lamb Kofta Skewers
Ingredients:
- 500g lean lamb mince
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup mint leaves, finely chopped
- 1/4 cup parsley, finely chopped
- 1 tsp ground cumin
- 1/4 tsp ground cinnamon
- Salt and pepper to taste
- 2 bell peppers, cut into chunks
- 1 red onion, cut into chunks
- 1 cup halved strawberries

Instructions:
- In a bowl, combine the lamb mince, minced garlic, chopped mint and parsley, ground cumin and cinnamon, salt, and pepper. Mix well to combine.
- Shape the mixture into elongated patties around skewers and refrigerate for 20 minutes.
- Preheat your grill (or grilling pan) over medium heat.
- Drizzle the skewers with a tbsp of olive oil, then arrange them on the grill.
- Cook each side for about 6-8 minutes or until fully cooked and slightly charred.
- In another bowl, combine the bell peppers, red onions, and strawberries. Drizzle the remaining olive oil on top and lightly season with salt and pepper.
- Thread the vegetable and fruit mixture onto separate skewers and grill them for about 2-3 minutes on each side or until slightly charred and softened.
- Serve the fruity vegetable skewers alongside the lamb kofta skewers.
Plating:
Rest the grilled lamb kofta skewers on a large white plate, leaving some space for the fruit and vegetable skewers. Arrange the colorful fruit and vegetable skewers adjacent to the lamb. The vivid color of the fruit and vegetable skewers should contrast the dark, grilled color of the lamb, making the dish visually appealing and inviting. Ideally, from the visual layout, one should be able to distinguish the blend of traditional aspects (the lamb kofta) with the unique touch (the fruity skewers). Scatter some fresh mint leaves and halved strawberries around for garnishing and an added burst of color. The result should be a vibrant, enticing dish that’s high in protein and low in carbs.
