Meal: Ginger-Soy Glazed Beef Tenderloin
Ingredients:
- 1.5 lbs of beef tenderloin
- Ginger root, 2 inches, grated
- 1/3 cup of low-sodium soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- 1/4 cup of chopped green onions
- 2 garlic cloves, minced
- 1 tablespoon of raw honey
- 1 tablespoon of cornstarch
- 1 tablespoon of water
- Freshly ground black pepper
- Sesame seeds for garnish
Instructions:
- Begin by preparing the ginger-soy glaze. In a pan, combine the soy sauce, sesame oil, rice vinegar, green onions, grated ginger root, minced garlic, and honey. Bring this mixture to a simmer over medium heat.
- In a separate bowl, mix together the cornstarch and water until it forms a smooth paste. Slowly whisk this into the simmering sauce until it thickens. Remove from heat and set aside.
- Preheat your grill to a medium-high heat. Season your beef tenderloin with freshly ground black pepper and brush it lightly with some of the ginger-soy glaze.
- Cook the beef tenderloin on the grill for about 5-7 minutes per side or until it reaches your desired level of doneness. During the last few minutes of cooking, brush some more of the glaze onto the beef.
- Let the cooked beef rest for a few minutes to allow the juices to redistribute.

Plating:
Slice the beef tenderloin into thin strips and arrange them in a fanned-out pattern on a platter. Drizzle over the remaining ginger-soy glaze, ensuring that each slice gets a good coating. Sprinkle liberally with sesame seeds for a touch of crunch. Along one side of the platter, form a small pile of additional chopped green onions for a pop of fresh color. The plate should be presented with simplicity and elegance, showcasing the tender, glazed beef as the star of the meal.
