Recipe: Golden Turkey Protein Parcel
Ingredients:
- Main Ingredient: 500 grams of turkey breast
- 2 tablespoons of olive oil
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 large zucchini, grated
- 1/2 cup of diced bell pepper
- Salt and black pepper to taste
- 1 tablespoon of dried herbs (thyme, rosemary or oregano)
- 1 tablespoon of mustard
- 1/2 cup of grated mature cheddar cheese
- 2 eggs
- 50 grams of ground almonds (almond flour)

Cooking Instructions:
- Preheat the oven to 200 degrees centigrade
- Heat 1 tablespoon of olive oil in a pan, add the finely chopped onion, garlic, grated zucchini and diced bell pepper. Sauté until the onions are translucent and the zucchini has released its moisture.
- Cut the turkey breast into small pieces and blend in a food processor until it becomes a thick paste. Add this to the vegetable mixture.
- Add in the mustard, the herbs, salt and pepper, and mix together. Allow this mixture to cool down a bit.
- Once cooled, add in the two eggs, grated cheese, and ground almonds. Mix until it binds together.
- Press the mixture into a loaf tin that has been greased with the remaining olive oil.
- Bake for about 30-40 minutes or until golden and crispy. Check with a skewer, if it comes out clean, the turkey parcel is done.
- Let it cool for 10 minutes before slicing.
Plating:
Lay a bed of fresh arugula on your plate, top with a generous slice of the Golden Turkey Protein Parcel. Garnish with a sprig of rosemary or thyme for an elegant touch. The parcel should be golden in colour with a crispy looking crust. The contrast of the green arugula against the golden parcel should create an inviting, mouth-watering meal packed with protein punch.
