Hearty Lamb and Quinoa Stuffed Bell Peppers
Ingredients:
- 1 pound ground lamb (80% lean)
- 4 large bell peppers (any color)
- 1.5 cups cooked quinoa
- 1/4 cup chopped fresh mint
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1 large onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the peppers, remove the seeds, and hollow them out.
- Heat olive oil in a pan over medium heat. Cook the onions and garlic until they are soft.
- Add the ground lamb to the pan and cook until it’s no longer pink.
- Stir in the cooked quinoa, mint, and parsley. Season with salt and pepper.
- Spoon the lamb mixture into the hollowed-out bell peppers.
- Place the stuffed bell peppers in a baking dish.
- Bake for 30-35 minutes until the peppers are tender.
- Let the peppers rest for a few minutes before serving.
