High Protein Beef & Quinoa Stuffed Bell Peppers

Ingredients
- 500g ground beef (lean)
- 4 bell peppers
- 2 tbsp olive oil
- 1 cup cooked quinoa
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 can of diced tomatoes (drained)
- Salt to taste
- Pepper to taste
- 2 tbsp fresh chopped parsley
- 2 tsp paprika
- 1 cup shredded mozzarella
Cooking Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- In a sauté pan, heat the olive oil over medium-high heat. Add the onions and garlic, sauté until onions are translucent.
- Add the ground beef to the pan and cook until browned. Drain any extra fat.
- Add the diced tomatoes, cooked quinoa, salt, pepper, paprika to the pan and stir well to combine.
- Cut the tops off of the bell peppers and remove the seeds. Place the peppers in a baking dish.
- Fill each pepper with the beef and quinoa mixture until they are nicely packed.
- Top each filled pepper with shredded mozzarella cheese.
- Place in the preheated oven and bake for about 25-30 minutes or until the peppers are tender and the cheese is melted and slightly browned.

Plating
Place each stuffed bell pepper in the center of a white plate to illuminate their vibrant colors. A small side dish could contain some extra stuffing, garnished with sprigs of parsley. Sprinkle some additional chopped parsley around the pepper on the plate as well for added color and to enhance the dish’s aesthetic appeal. The melted, slightly browned cheese on top of the peppers should tease the appetite, ready to be sliced and served. Ensure that nothing else on the plate distracts from the star of the show: the hearty, protein-packed stuffed bell peppers.
