Lamb Cajun Crunch Wrap Recipe
Ingredients:
For the wrap:
- 500g lean lamb mince (1110 kcal, 210g protein, 50g fat, 0g carbs)
- 2 cups chopped lettuce (10 kcal, 1g protein, 0g fat, 2g carbs)
- 2 cups chopped tomatoes (70 kcal, 3g protein, 0g fat, 14g carbs)
- 1 cup red onions, chopped (64 kcal, 2g protein, 0g fat, 15g carbs)
- 1 cup bell peppers, sliced (45 kcal, 1g protein, 0g fat, 10g carbs)
- 4 High protein, low-carb tortillas (400 kcal, 60g protein, 16g fat, 24g carbs)
- 8 tbsp low-fat Greek yogurt (80 kcal, 14g protein, 0g fat, 4g carbs)
For the seasoning:
- 2 tbsp cajun seasoning
- Salt and pepper to taste
Instructions:
- In a large frying pan, cook the lamb mince until it is browned. Drain off any excess fat.
- Add the Cajun seasoning to the cooked mince along with salt and pepper according to your preference. Mix thoroughly until the mince is well coated, then remove the pan from heat.
- Lay out a tortilla and start with a layer of lettuce at the center. Add a layer of mince on top of the lettuce followed by some chopped tomatoes, red onions, and bell peppers.
- Dollop two tablespoons of Greek yogurt on top of the vegetables on each tortilla.
- Fold the tortilla, starting from the bottom and continuing around until it forms a hexagon shape.
- Repeat the process with the remaining tortillas.
- Grill the wraps in a preheated pan for about 1-2 minutes on each side, until browned and crispy.

Plating:
