Lamb-Feta Powerballs
Ingredients:
- 500g lean lamb minced
- 100g crumbled feta cheese
- 10g chopped fresh mint
- 10g chopped fresh coriander
- 30g whole grain breadcrumbs
- 1 large egg
- 10g crushed garlic
- Salt and pepper to taste
- Olive oil for cooking
Cooking Instructions:
- In a large bowl, mix together the minced lamb, crumbled feta, chopped mint and coriander, breadcrumbs, egg, crushed garlic, and plenty of salt and pepper.
- Using your hands, form this mixture into small balls about the size of a golf ball.
- Heat a little olive oil in a large non-stick frying pan. Add the balls and cook for about 10-12 minutes on medium-high, turning frequently, until they are browned all over and cooked through.

Plating:
Arrange two Lamb-Feta Powerballs on one side of a round white plate along with a leafy green salad to contrast with the hearty meatballs. Drizzle with some tzatziki sauce, and add a lemon wedge for a pop of color. Sprinkle a little more feta and chopped herbs on top of the powerballs for color and to reinforce the flavors within. The resulting dish should present a vibrant and well-balanced blend of colors – green from salad and herbs, white from feta and tzatziki sauce, and brown from the powerballs, which indicates a well-rounded and high protein meal.
