Recipe Name: Lamb Lean Proteini Kebabs
Ingredients:
- 1 kg lean lamb, cut into cubes
- 1 red bell pepper, cut into pieces
- 1 yellow bell pepper, cut into pieces
- 1 green bell pepper, cut into pieces
- 2 medium-sized onions, cut into pieces
- 1 cup Greek yogurt
- 2 cloves garlic, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- Fresh mint leaves for garnish
- Olive oil for grilling

Cooking Instructions:
- Combine Greek yogurt, garlic, ground cumin, ground coriander and salt & pepper in a bowl, stirring well to make the marinade.
- Place the lamb cubes into the marinade, ensuring they are all well coated. Cover and refrigerate for a minimum of 2 hours to allow the flavours to infuse.
- Preheat the grill on medium-high heat and lightly oil the grates.
- Skewer the marinated lamb cubes, bell peppers, and onions alternatively onto the skewers.
- Grill skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your liking and the vegetables are charred and softened.
- Once done, allow all the kebabs to rest for a few minutes before serving.
Plating:
Position a couple of skewers diagonally across the centre of the plate. Let the skewers overlap slightly and pile them high, giving an impression of abundance. Sprinkle freshly chopped mint leaves over the skewers to add an eye-catching contrast to the charred kebabs. Place a dollop of extra Greek yogurt on the side of the plate with a sprinkle of ground cumin on top. This dish should look enticing, colorful, and full of vibrant charm.
