Ingredients:
For the Lamb Chops:
- 4 lamb chops (~400g)
- 2 cloves of garlic, minced
- Zest and juice of 1 lemon
- 2 tablespoons of olive oil
- Salt and Pepper to taste
For the Quinoa Salad:
- 1 cup of cooked quinoa
- 1/2 cup of chopped cucumbers
- 1/2 cup of chopped tomatoes
- 1/2 cup of feta cheese (omit for a lower fat content)
- 2 tablespoons of olive oil
- Salt and Pepper to taste
Instructions:
- Marinate the lamb chops with garlic, lemon zest, lemon juice, olive oil, salt, and pepper. Allow them to sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the lamb chops for 5-7 minutes on each side or until they reach your desired level of doneness.
- For the salad, mix together cooked quinoa, cucumbers, tomatoes, feta, olive oil, salt, and pepper.
- Serve the lamb chops with the quinoa salad.
