Power Lamb Quinoa Stir-Fry
Ingredients:
- 500 grams lean lamb, sliced into thin strips
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves of garlic, minced
- 1 cup cooked quinoa
- 1 cup broccoli florets
- 1 cup snap peas
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon barley miso paste
- 1 teaspoon black pepper
Cooking Instructions:
- In a large wok or pan, heat the olive oil over medium-high heat. Add the lamb strips and cook until they’re no longer pink, around 2-4 minutes.
- Add the red bell pepper, onion, garlic, quinoa, broccoli and snap peas to the pan with the lamb. Stir-fry these ingredients for about 5 minutes or until the vegetables are slightly tender.
- In a small bowl, mix together the low-sodium soy sauce, miso paste and black pepper, then pour it over stir-fry.
- Continue to cook the stir-fry, subtly stirring for another 2-3 minutes so it can fully absorb the flavors of the sauce.
