Protein-Packed Beefy Quinoa Mix
Ingredients:
- 500 grams of lean ground beef
- 1 cup of quinoa
- 3 cups of vegetable broth
- 1 cup of diced red bell peppers
- 1 cup of diced yellow bell peppers
- 1/2 cup of chopped onions
- 2 cloves of minced garlic
- 1 tablespoon of olive oil
- Salt and pepper to taste
- A handful of chopped fresh parsley
Cooking Instructions:
- Start by rinsing the quinoa under cold water and then leave to drain.
- Heat the olive oil in a frying pan and cook the onions and garlic until they become soft and golden.
- Add the diced bell peppers to the pan and let them cook for a few minutes.
- Add the ground beef and season it with salt and pepper. Stir constantly until all the beef is well cooked.
- Add the vegetable broth to a pot and bring it to a boil. Add the rinsed quinoa, cover the pot and let it simmer for around 15-20 minutes until all the broth is absorbed.
- Once both the beef and quinoa are done, combine them thoroughly in a big bowl and garnish with fresh parsley.
One serving is around 550 calories, comprising of 51 g of protein, 20 g of fat, and 45 g of carbs.
Plating:
Serve your Protein-Packed Beefy Quinoa Mix in a shallow bowl, garnished with bits of parsley. Arrange a large circular serving of the mix in the bowl, allowing for a clear view of the vibrant colors from the peppers. For a visual pop, sprinkle a few more pieces of diced bell peppers on top right before serving. This dish should look as appetizing and colorful as it tastes.
