Savory Herbed Lamb Chops
Ingredients:
- 4 lamb chops (about 6 oz each)
- 2 tablespoons of olive oil
- 4 garlic cloves crushed
- 1 tablespoon of rosemary chopped
- 1 tablespoon of thyme chopped
- Salt and pepper to taste
- Lemon wedges
- 2 cups of broccoli
Instructions:
- Preheat your grill/broiler.
- Rub lamb chops with olive oil and season with salt and pepper.
- In a small bowl, mix the crushed garlic, rosemary, and thyme. Rub this mixture onto both sides of the lamb chops.
- Grill/Broil the lamb chops for about 4 to 5 minutes per side for medium-rare.
- While lamb is cooking, steam broccoli until tender.
- Serve the lamb chops with a squeeze of fresh lemon and a side of steamed broccoli.
