Spiced Lamb Protein Loaf
Ingredients:
- 500g Lean Lamb Mince
- 1 Medium Onion, finely chopped
- 4 Garlic cloves, grated
- 1 cup Spinach, finely chopped
- 1cup fresh Parsley, chopped
- 2 Large Eggs
- 1 cup Almond meal
- 2 teaspoon Cumin powder
- 2 teaspoon Paprika powder
- Salt and Pepper to taste
Cooking Instructions:
- Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper.
- Heat a little bit of olive oil in a pan and sauté the onions and garlic until soft. Allow it to cool.
- In a large mixing bowl, combine lamb mince, cooked onion, and garlic, spinach, parsley, almond meal, eggs, cumin, paprika, salt, and pepper. Mix properly until all ingredients are well incorporated.
- Transfer the mixture to the lined loaf pan and press down firmly.
- Bake in the oven for about 50-60 minutes or until fully cooked and the top is nicely browned.
- Allow to cool for about 10 minutes before slicing.

Plating:
Slice the protein loaf into 2cm thick slices and place two slices on a plate, slightly overlapping. Arrange a handful of mixed crispy salad leaves on one side of the plate, adding a vibrant, fresh contrast to the rich lamb loaf. If preferred, you can drizzle a bit of olive oil and lemon dressing over the salad for a tangy note. The overall look should be rustic yet inviting, highlighting the succulent slices of lamb loaf as the star of the plate. Garnish with a sprig of parsley on top of the lamb loaf slices.
