- 500g lean lamb mince
- 1 cup of uncooked quinoa
- 1/2 cup chopped red onion
- 2 cloves of garlic, minced
- 2 tsp of cumin
- 1 tsp of coriander
- 1/2 tsp of turmeric
- 1/4 tsp of cayenne pepper
- Salt and Pepper to taste
- 2 tbsp of olive oil
- 2 cups of chopped kale
- 1 cup chopped bell pepper
- 2 boiled eggs, sliced
Cooking Instructions
- Boil quinoa according to package instructions and set aside.
- Heat olive oil in a large pan over medium-high heat. Add onion, garlic, bell pepper, and sauté until the onions become translucent.
- Add the lamb mince to the pan, breaking it up as it browns. Cook for about 8-10 minutes until the meat is thoroughly cooked.
- Lower the heat to medium, add cumin, coriander, turmeric, cayenne, salt, and pepper. Stir well to coat the meat with spices.
- Add kale to the pan, stir, and cook for additional 5 minutes until the kale wilts.
- Fluff quinoa with a fork and divide between four serving bowls.
- Top each bowl with the lamb mixture and a sliced boiled egg.
