Spiced Lamb Quinoa Salad
Ingredients:
- 400g of lean lamb steaks
- 2 teaspoons of smoked paprika
- 1 tablespoon of olive oil
- 1 cup of cooked quinoa
- 1 cucumber, chopped
- 2 tomatoes, chopped
- 1/4 cup of pomegranate seeds
- 1 tablespoon of lemon juice
- 1/2 cup of Greek yogurt
- A handful of fresh mint leaves
Instructions:
- Take the lamb steaks and pat them dry using a kitchen towel. Sprinkle smoked paprika on both sides.
- Heat the olive oil in a pan over high heat and sear the lamb steaks for about 3 minutes on each side or until cooked to your liking. Allow to rest for a few minutes before slicing thinly.
- In a large bowl, mix together the cooked quinoa, cucumber, tomatoes, and pomegranate seeds.
- Whisk the lemon juice into the Greek yogurt to make a dressing and season with salt and pepper.
- Toss the dressing with the quinoa mixture, then add in the sliced lamb, mix gently until everything is well coated with the dressing.
- Garnish with the fresh mint leaves and serve.

Plating:
Arrange the lamb evenly over the quinoa salad and place a dollop of Greek yogurt on one side. Pour dressing in a circle around the lamb and quinoa for an artistic finish.
