For the marinade:

Cooking Instructions
- Combine Greek yogurt, honey, olive oil, lemon juice, minced garlic, salt, and pepper in a bowl to create the marinade.
- Add the lamb cubes to the marinade and stir until all pieces are fully coated. Allow to marinate for at least 2 hours, or overnight in the refrigerator.
- Preheat your grill or stovetop pan to medium-high heat.
- While the grill or pan is heating, thread the lamb cubes onto skewers, alternating with bell pepper, onion, and cherry tomato pieces.
- Grill the skewers for about 15 minutes, or until the lamb is cooked to your desired level of doneness, turning occasionally for even grilling.
- Remove from the grill and let rest for a few minutes before serving.
Plating
On a clean, white dinner plate, place two lamb kabobs diagonally across the middle. Serve alongside a bright, fresh salad of your choice (remember to keep it high protein and low carb!), and drizzle any remaining marinade lightly over the top of the kabobs. The plate should display an array of colors from the charred kabobs and the fresh salad. A bright and bold dish that’s not only appetizing to the taste but also to the sight.
