- 1/2 cup uncooked quinoa

Cooking Instructions:
- Preheat the oven to 400°F (200°C). Press the tofu to remove excess water and slice it into cubes. Toss the cubes in a bowl with a tablespoon of olive oil, salt, pepper, and chopped garlic. Arrange in one layer on a baking sheet and bake for 15-20 minutes, flipping halfway until edges are browned.
- Rinse quinoa under cold water. Bring two cups of water to a boil and add a little salt. Put quinoa into the boiling water, reduce heat to low, cover and cook for 15 minutes. The grains should be translucent and the germ mostly detached.
- While the quinoa and tofu are cooking, heat remaining olive oil over medium-high heat in a large pan. Sauté the bell peppers, broccoli, and optional chili until vegetables are tender, about 5 minutes. Season with soy sauce.
- Once quinoa and tofu are cooked, add them to the pan with vegetables and stir to combine everything together. Season again to taste if needed.
